Preparing Your Chocolate

There are at least two kinds of chocolate you are going to want to know how to prepare for these strawberries. The first is tempered chocolate, and the second is modeling chocolate. Both of these types involve melting chocolate, but where modeling chocolate is quite easy to prepare, tempered chocolate is, well…. temperamental. 

How to Temper Chocolate

To temper chocolate, start off with a total of 16 oz chocolate and remove 4 oz, leaving 12 oz chocolate to start working with. 

Place chocolate into a heatproof bowl and put the bowl on top of a pan of boiling water, this creates your own double boiler. 

Melt the chocolate while stirring and bring to a temperature of 115 to 120F on a candy thermometer for dark chocolate. 

Add 4 oz of reserved chocolate and stir. The added chocolate will cool the mixture down. You want it to be between 88 and 90F. Keep the chocolate at this temperature, heating or cooling as needed. 

Place a drop of chocolate on parchment paper, and smooth it out. This will test your chocolate. If it sets up in 5 minutes, you are ready to go.

How To Store Chocolate Covered Strawberries Rose

There are a couple of different ways you can store chocolate-covered strawberry roses. If lower than 68°F and kept there less than twenty-four hours, chocolate-covered strawberries may be kept at room temperature. However, the best way to keep them fresh is to place them in an airtight container, after they have dried, and put them into your refrigerator. I have found that lining your container with paper towels will help prevent from condensation gathering under your strawberries, helps them to keep better.

Chocolate-covered strawberry roses will last about 3 to 4 days in the fridge but are best within 24 hours after dipping. After this time frame, the berries tend to get mushy and taste bad, although the chocolate may still look good.

So how do you make these on your own? Surprisingly these chocolate-covered strawberry roses are quite simple to make, but they look amazing! 

Ingredients for Chocolate Covered Strawberries Rose:

Modeling Chocolate

To make these, you will need the following three ingredients. 

Strawberries (chocolate covered) 

Dark Chocolate or White Chocolate

Light Corn Syrup

Directions

Step 1: Gather the ingredients

Find your strawberries, dark or white chocolate, and light corn syrup. 

Step2: Prepare Strawberries

Rinse all your strawberries well and be sure they are completely dried. Once dry, if desired remove the hulls from your strawberries. Then dip into melted tempered chocolate and allow to sit until dry. You may cover in modeling chocolate if you prefer. It is up to your preference. 

Step 3: Prepare Chocolate

Start making your modeling chocolate. Place a large pot on a burner filled about halfway with water. Bring it to a steady simmer. Place one whole bag of chocolate chips into a heat-proof bowl and put the bowl into the boiling water. This will create a double boiler effect. Melt your chocolate while stirring. Once the chocolate is melted, stir in ½ cup light corn syrup. Continue stirring together, for about eight to ten more minutes. 

Once the chocolate has been completely mixed together, remove it from the heat. Line a baking sheet with plastic wrap and pour your modeling chocolate mixture onto the plastic. Smooth it out and then fold the other side of the plastic over it, careful to not leave air bubbles. Carefully pat around the edge, to seal shut. 

Place modeling chocolate into the fridge for 30 minutes to cool or allow it to sit at room temperature overnight. 

Step 4: Assemble

Take your modeling chocolate and work it until it is pliable. Then divide out small sections, roll into balls, and then flatten out into petal shapes. Assemble your rose and allow it to sit. Store in a plastic bag, or plastic wrap if able, until you are ready to serve. 

Variations

If you prefer, there are other variations on chocolate-covered strawberry roses using modeling chocolate. 

Chocolate Drizzle for Strawberries

Perhaps you prefer to cut your strawberries into rose shapes and top with a chocolate drizzle. Here is a recipe for the chocolate drizzle to go on top of strawberries cut into roses.

1/2 cup butter

2 cups powdered sugar

1/2 cup cocoa powder

2 tablespoons vanilla extract

1 tablespoon milk

Wash your strawberries and pat them dry, leaving stems intact.

Once they are completely dry, starting at the tip of your strawberry, take a paring knife and create three small slits in the strawberry, carefully pushing the pieces out. 

Repeat small slices about halfway down the strawberry. Use your knife to flair out the pieces, but still leaving them intact. 

Repeat around the lower section of your strawberry with one last row. Trip the top to form a better center to your flower if desired. 

How to Make Chocolate Topping for Strawberry Roses

In a saucepan, mix sugar, cocoa powder and stir to combine. Cream the butter and then mix it into your mixture. Add vanilla and milk until it is the right consistency. 

Your sauce will be slightly melty. Cool and then drizzle over the top of your strawberries that have been cut to roses. 

Dark Chocolate Covered Rosé Soaked Strawberries

Take your strawberries and two cups of Rosé wine. Soak your strawberries in the wine for at least two hours or overnight. Pat dry, and allow to completely dry before dipping into melted chocolate, tempered chocolate, or covering with modeling chocolate. 

Drunken Chocolate Covered Strawberries  

These are similar to the above concept with Rosé, however, these can be made with whatever alcohol you like. 

To make these: 

Soak your strawberries in a bowl filled with your choice of alcohol. Cover and refrigerate for two hours. 

Remove the strawberries from the bowl and pat dry. Then allow them to completely dry before moving on. 

Finally, dip strawberries into your choice of chocolate. 

Sugar-Free Chocolate Covered Strawberry Roses

To make these, you simply cut strawberries into roses and then melt sugar-free chocolate chips. Once chocolate chips are completely melted, dip your strawberries into the chocolate and twirl to cover. Allow for chocolate to dry before serving. 

Tips and Tricks

My favorite out of all of these ideas is to make Gorgeous Rose shaped Chocolate Covered Strawberries using modeling chocolate. I have found that this allows my roses to look beautiful and it is an easy, yet fun process to make the roses. I struggle to get fresh strawberries cut just right so that I am happy with the cut rose look. The trick to modeling chocolate roses is to work it until it is moldable and press the petals out thin.
